About Parnasse Sauvignon Blanc 2016
Parnasse is named after the mountain grass that flowers above our vineyards each spring, marking the beginning of a long, languid summer. Francoise Estier weaves the character and strengths of a number of individual regions to create a wine style truly expressive of the South of France – beautifully ripe and expressive whilst softly structured and easy to appreciate.
A very fast and precise vinification to avoid oxygen and maximise fruit expression and aromatics. A very cool fermentation (15 to 18 degrees) is undertaken in stainless steel tanks before maturation on lees in tank for three months to build depth and texture. Malolactic fermentation is prevented to ensure natural, crisp varietal character.
A burst of early heat initiated an early budburst before an unsettled summer with cool temperatures and showers. The conditions shifted to a very moderate autumn that allowed for perfect ripening. The harvest was two weeks later than normal but those with the patience and bravery to wait were rewarded fruit with a perfect balance of fruit and natural acidity.
Very pale yellow-green in colour. The nose is fresh, pure and very aromatic with varietal citrus fruit, floral and grassy aromas. The palate offers a thrilling burst of vibrant tropical and citrus fruit flavours wrapped in soft mineral acidity. Enjoy this wine well chilled with seafood and other lightly flavoured dishes.
