Since the first Bullnose Syrah, from 1992, each successive vintage has steadily increased in palate weight and structure as the original plantings have developed greater maturity. In recent years, the addition of a new French clone of Syrah has introduced floral aromatics and greater complexity. In the fabulous 2005 vintage, these separate parcels of grapes were hand harvested between the 24th April and 2nd May.
The bunches were destemmed and crushed before a traditional warm plunged fermentation. The resulting wine underwent extended maceration on skins before pressing and malolactic fermentation. It was then run into a mixture of new and seasoned French oak barriques for 16 months’ maturation. During this time, the wine was regularly topped and racked before egg-white fining, blending and bottling in September 2006. Bullnose Syrah 2005 has a dark magenta colour with ripe, exotic aromas of damson plums, blackberry syrup and allspice. The palate has highlights of vanilla and marzipan and supple even tannins providing great length. It is more concentrated than any previous vintage and will cellar for at least ten years.
