Santa Rita Reserva Sauvignon Blanc 2007

Winemaker's comments :

This medium intensity wine has a brilliant yellow color with green hues. Its intense aroma is a fragrant blend of citrus fruit and maracuya with a herbaceous backdrop typical of this variety. On the palate, it is concentrated, with a pleasant acidity that highlights its freshness, firm structure and excellent persistence.

Region : Casablanca Valley

Climate & Soil : A cool climate that has a maritime influence caused by coastal breezes due to the location and topography, which act as moderating forces of the thermal conditions. Mean temperatures in summer reach 25ºC and the yearly mean is 14.4ºC. Rainfall is concentrated between the months of May-October with a yearly mean of 450mm. The soil is of alluvial origin with a very fine loamy clay loam texture, high permeability and scarce humidity retention.

Vinification : Selection of grapes originating from the Maule Valley, specifically from zones located in mountain foothills that ripen late in the season and have yields that do not exceed 9,000 kg./ha. All grapes are handpicked and processed with strict reduction to preserve all the variety's fruit characteristics.

Suggested Food : Ideal as an aperitif or with cebiche, shrimp cocktail, chicken and caviar.
