Seppeltsfield NV Flora Palomino Fino 500ml

Brilliant pale yellow with a green hue. The nose is stylish and refined with the classic nutty, toasty, tangy aromas of top quality fino. The palate is intense, with a lively, clean freshness and tangy, flor-sherry flavours. Flavours seem to build and offer new dimensions long after the wine is swallowed, before finally evolving to a bone-dry, palate cleansing finish.

DP117 has reigned supreme in the Australian show circuit for decades. It is made using the traditional solera system, resulting in a seamless blend of wines of varying age, protected by the flor yeast which floats on the surface of the wine and is responsible for its unique taste. This driest-of-all Sherries is also the finest, and recent changes in the law have allowed Seppelt winemaker James Godfrey to make the wine even finer by reducing the alcohol content from around 17 per cent to around 15.5 per cent. There is nothing better than a chilled glass of Fino on a hot summer's day. It is essential, incidentally, that the stock be fresh, and that the bottle be kept in the refrigerator after it is opened, and consumed within two or three days of opening. James Halliday

Brilliant green-yellow; the bouquet is strong and stylish, with that faintly nutty, faintly tangy cut which is the hallmark of Fino Sherry. The palate is intense and racy, the flavour lingering in the mouth long after the wine is swallowed, but not so long to stop you taking the next mouthful. 96/100 James Halliday
