De Bortoli Gulf Station Yarra Valley Sauvignon 2007 Vintage Conditions: The 2006 growing season was hot at the outset but the final weeks leading to harvest were perfect for ripening. Winemaking: Fruit was crushed, pressed and juice roughly clarified before fermentation. The juice was then transferred to new , one and two year old French oak barriques as well as to tank for fermentation and maturation. Post fermentation both the barrels and tanks were stirred fortnightly to add complexity and texture.
