• Delestage every other day during alcoholic fermentation

All our vineyards are located in the municipality of Monforte d'Alba;
Are intended for the production of this wine 2,5 hectares of vineyards in the Ravera di Monforte area, south / south-west exposure.

The treatments that are preferred are copper and sulfur. the care for our vineyards is very important: it is the result of what you will taste in the bottle
Age of the vineyard: 35 years
Varietal: Nebbiolo 100%
Vinification: Vinification with emerged cap with daily pump-overs, till the end of fermentation and extended maceration with submerged cap; 20-25 days of total maceration; alcoholic fermentation folllowed by a malolactic fermentation
Ageing: 10 months in tonneaux and Slavonia botti for 12 months; aged in bottle for 6 months
Bottling: In the summer after ageing
Appearance: Deep red with light orange glints
Aroma: Full-bodied with hints of violet, plum, vanilla, cinnamon and liquorice
Taste: Full-bodied, fresh, balanced, persistent and complex.
