About Yeringberg Viognier 2018
The Yeringberg Viognier is a relative newcomer to this iconic estate.
The fruit is picked at two stages, the first giving freshness, spice and vital acidity, the second and later pick bringing the generosity of flavour and the weight to the wine. The fruit is fermented wild in barrel and the wine is left to rest for a couple of years prior to release.
All efforts taken to build complexity with restraint into this often overblown variety. It's a winning combination and one that Sandra de Pury is executing wonderfully.
