The fruit was gently whole-bunch pressed directly into French oak barriques (of which 7% were new), where fermentation commenced spontaneously with ambient yeasts. Following fermentation, the wine was aged on lees (without battonage) for nine months. The wine was bottled without fining and with minimal filtration.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan data-mce-fragment=\"1\"\u003ePure and attractive, the nose opens with flint and ginger spice that leads to fruiter notes of stone fruit and lime. Rounding this out is a subtle hint of white floral and honeysuckle.
